Red Velvet Whoopie Pies

My amazing friend Melissa is a bit of a master baker and has lately been teaching me some different recipes (you might remember this post on how to make macarons). Recently we made Red Velvet Whoopie pies and documented the process to share with you all as well.
Ingredients:
Whoopie pies: 2 cups all-purpose flour, 2 tbsp. cocoa powder, ½ tsp. baking powder, ¼ tsp. salt, 8 tbsp. butter, at room temperature, 1 cup light brown sugar, packed, 1 large egg, 1 tsp. vanilla extract, ½ cup buttermilk, at room temperature, 1 oz. red food coloring
Icing: 8 oz. cream cheese, 5 tbsp. butter, at room temperature, 2 tsp. vanilla extract, 2½ cups icing sugar, sifted
Preheat oven to 180˚ C
Whisk together the dry ingredients in one bowl and in a seperate bowl cream the butter and brown sugar until light and fluffy. 
Beat in a the egg and the vanilla essence
Mix in around a third of the dry ingredients with the butter mixture, followed by half the buttermilk, then repeat until all the dry ingredients are mixed through.
Blend in the food colouring
Place mixture into a piping bag then squeeze onto a lined baking tray, then place into oven for around 7-9 minutes until the tops are set. 

After removing from the oven make sure you allow them to cool for 10ish minutes before moving them onto the cooling rack. We made a cream cheese icing with cream cheese, butter, icing sugar and vanilla extract for the fillings and then matched up similar sized circles and squeezed them together. 

Mission complete!

Thank you so much for this! I made these last night and they turned out amazing! I didn't have the full amount of icing sugar (1 cup) and it was already very sweet!

I recommended to soften the butter a bit as it takes a while to beat the butter and brown sugar.
