
Ingredients: 55g soft butter, 1 cup soft light brown sugar, 1/2 cup crunchy peanut butter, 2 lightly beaten eggs, 1 tsp vanilla extract, 1 cup plain flour, 2 tsp baking powder, 1/3 cup milk. For frosting: 2/3 cup cream cheese, 1/8 cup soft butter, 1 cup icing sugar.
For my "learning to bake" journey this year I kinda threw myself in the deep end and started off with learning to make Macarons and Red Velvet Whoopie Pies and skipped the baby steps like cookies and cupcakes. So would you believe, at age 24, these Peanut Butter Cupcakes are the FIRST cupcakes I have ever baked in my entire life! Crazy. They turned out pretty good though (thanks to the help of a patient teacher) and the recipe is below.

♥ Preheat oven to 180°
♥ Place butter, sugar & peanut butter in a bowl & beat until well mixed. Gradually beat in the eggs & vanilla extract. Sift in the flour & baking powder then fold them into the mixture, alternating with the milk. Spoon mixture into baking tray.
♥ Bake in oven for 25 minutes or until well risen & springy to touch
♥ For frosting beat butter & cream cheese together until smooth, sift in the icing sugar & beat together until well mixed
♥ Spread frosting onto cooled cupcakes and you're done!

*I truly had no idea cupcakes would be so easy to make. I'm honestly such a learner when it comes to baking!!
