Home Sweet Home
Even though it's not quite soup season yet here in New Zealand (almost!) I couldn't resist making a quick batch of pumpkin today while I had the time. I don't really have a recipe for this but if you haven't made pumpkin soup before I usually just throw pumpkin, onion, garlic, water, stock and my fave spices in a pot and simmer, then blend with coconut cream and serve. Yum :)
I'm also a big fan of sweet potato soup! But otherwise I haven't really branched out with my flavours and vege combos. Any good recommendations? :)
P.S Also just had to mention how incredibly buzzed I am about this amazing news!

ReplyDeleteI do love a good pumpkin soup, but never tried a sweet potato, so might have to give that a god once it cools down a bit more :)
Ooh! I can't stand coconut, but I just might need to try making pumpkin soup with regular milk sometime - it looks so yummy! <3

ReplyDeleteTry adding some pulpy orange juice to a pumpkin suop - it sounds weird but it's actually delicious! Maybe not with cococnut as well though.
ReplyDeleteI always add lentils, curry powder, chilli and ginger to my pumpkin soup - so good! Jamie Olivers parsnip and (ginger, I think) is so good. I really want to make a roasted tomato & capsicum.
